For the best results, make this egg-free vegan mayo with some good-quality fruity extra virgin olive oil. If the oil is too light the mayo will be bland and lack flavour. Why not make some extra mayo and use it in sandwiches or with French fries? It will keep well in the fridge for up to a week.
